Vanilla and Cherry Ice Cream Dream
  • 1 litre Vanilla ice cream home-made or bought
  • 1 jar (370g) Bonne Maman Cherry Conserve
  1. Allow the vanilla ice cream to thaw in the refrigerator (not at room temperature, or it will go too runny); it should become pliable.
  2. Line a cake tin or any other mould with cling film; this works best when the film is dampened on one side. Put in a third of the vanilla ice cream.
  3. With a spoon, make deep parallel channels lengthways and fill with cherry conserve. Cover with another layer of soft ice cream, make more channels and fill them with the conserve. Cover up with vanilla ice cream.
  4. Freeze the ice cream for at least 3 hours.
  5. To serve, turn the parfait out of the mould, cut into slices and serve with extra cherry conserve if desired.
